document.writeln('who measure every thing out spoon by spoon, cup by cup. Don\'t rightly know what ');

document.writeln('Good neighbor Sandra at the start of this dead end road, the lady responsible ');
document.writeln('for getting da ol\' mon into this cookin\' thingy is to be thanked for the first ');
document.writeln('two recipes. Thank you, Miz Sandra.<BR>');

document.writeln('<B>Seafood Chowder<BR>');
document.writeln('</B>1. Cut up 1/2 pound bacon in small pieces--cook until semi-crisp.<BR>');
document.writeln('2. Chop 1 medium onion and 2 stalks celery. Take bacon out of pot. Add onion and ');
document.writeln('celery. Cook until tender.<BR>');
document.writeln('3. Peel 2 medium potatoes. Chop into 1/2 inch cubes.<BR>');
document.writeln('4. Add 2 cans chicken broth to onion and celery. Add cooked bacon and chopped ');
document.writeln('potatoes.<BR>');
document.writeln('5. Cook until potatoes are soft.<BR>');
document.writeln('Then add:<BR>');
document.writeln('1 can evaporated milk<BR>');
document.writeln('1 can crab meat<BR>');
document.writeln('1 can corn<BR>');
document.writeln('1 can shrimp<BR>');
document.writeln('<I><FONT SIZE="2"><B>Note:</B> If you can get fresh seafood, USE it!<BR>');

document.writeln('Season to taste. Add 1/4 pound butter. NO so-called butter substitutes, if you ');
document.writeln('please!<BR>');
document.writeln('<BR>');
document.writeln('Add flour to a small amount of milk to form semi-paste. Thicken soup with this ');
document.writeln('to desired consistency.<BR>');
document.writeln('<BR>');
document.writeln('Miz Sandra blessed da ol\' mon with a small sampling--he\'s gonna buy her some ');
document.writeln('larger containers--it was fantastic. What a mouth-watering treat. YES!<BR>');

document.writeln('This next recipe from Miz Sandra is for a fluffy style cornbread. Would you ');
document.writeln('believe that after searching Caj\'s Big Book high and low, he found cornbread ');
document.writeln('recipes for everything but? Yep, it\'s true.<BR>');
document.writeln('<B><BR>');
document.writeln('Sandra\'s Fluffy Cornbread<BR>');
document.writeln('</B>Before you start measuring out the dry ingredients, put bacon fat from your ');
document.writeln('dripping\'s jar into a cast iron skillet. Then put that heavy dude into a 425(F ');
document.writeln('oven while you do your mixing of ingredients. Heat until the bacon fat has ');
document.writeln('dissolved; the skillet will be really hot, so be careful. What you want besides ');
document.writeln('a hot skillet is to wind up with about 4 to 5 tablespoons of bacon fat to add to ');
document.writeln('your batter. This is your shortening.<BR>');
document.writeln('<BR>');
document.writeln('1 cup flour<BR>');
document.writeln('1/2 cup cornmeal<BR>');
document.writeln('1 teaspoon salt<BR>');
document.writeln('4 teaspoons baking powder<BR>');
document.writeln('1/8 or a couple of pinches of baking soda<BR>');
document.writeln('Mix all dry ingredients.<BR>');
document.writeln('<BR>');
document.writeln('Combine dry ingredients with:<BR>');
document.writeln('1 egg<BR>');
document.writeln('Buttermilk<BR>');
document.writeln('Your task is to make it into what could be called a batter. Not too runny, and ');
document.writeln('not too dry.<BR>');
document.writeln('<I><FONT SIZE="2"><B>Note:</B> Agreed, you\'ll have to experiment, but it\'s well worth the effort.<BR>');

document.writeln('<BR>');
document.writeln('Now that your skillet is hot, pour in the batter. Bake for about 25 minutes at ');
document.writeln('425(F.<BR>');
document.writeln('<I><FONT SIZE="2"><B>Note:</B> Having your skillet hot before you pour in the batter makes the crust ');
document.writeln('crispy. Also, if you want fluffier cornbread, add another egg.</FONT></I><BR>');
document.writeln('<BR>');
document.writeln('Give it a try. Absolutely melts in your mouth. No doubt about it.<BR>');

document.writeln('This next recipe comes from Sandra\'s Lesser-Half Joe. You need to know a little ');
document.writeln('bit, not much (you probably couldn\'t handle it), about Mr. Joe\'s background. ');
document.writeln('Many, many years ago when he was a young upstart in the US Navy, he was assigned ');
document.writeln('to mess cook detail--what the army called KP (kitchen police)--and after a few ');
document.writeln('times he was given the task of following a recipe to the &quot;T&quot; instead of ');
document.writeln('performing the normal onerous duties. Well, no surprise, because he did just ');
document.writeln('that. Now you can imagine, here\'s this huge caldron, steam pot, whatever it was ');
document.writeln('called--add 100 pounds of this, 50 pounds of that, 10 pounds of...You get the ');
document.writeln('idea.<BR>');
document.writeln('<BR>');
document.writeln('So, what happens when he gets out on his own, when he starts his serious ');
document.writeln('cooking--he NEVER uses a recipe. Oh, he admits, he\'ll look at one from time to ');
document.writeln('time, but only to get the ingredients. Then he starts thinking, and the more he ');
document.writeln('thinks, the more the recipe changes. Until he finally decides what he\'s going to ');
document.writeln('cook, and away he goes.<BR>');
document.writeln('<BR>');
document.writeln('Please pay \'tench. Joe knows how every spice he uses tastes. He knows what ');
document.writeln('spices you can put together, but more importantly which ones you can\'t. Now you ');
document.writeln('know a little more about the touchy-feely, excellent cook up at the start of the ');
document.writeln('dead end road. One other thing, special thanks to Miz Sandra for doing the best ');
document.writeln('she could translating this recipe. Even with a crystal ball it was neigh on to ');
document.writeln('impossible.<BR>');

document.writeln('<B>Joe\'s Oyster Stew<BR>');
document.writeln('</B>1. Cook bacon, 1/2 pound sliced.<BR>');
document.writeln('2. Take bacon out. Put 1 chopped onion, garlic, 2 stalks celery in pot, and cook ');
document.writeln('until soft.<BR>');
document.writeln('3. Drain any bacon grease off. Put in 1/4 pound butter and melt slowly.<BR>');
document.writeln('4. Put oysters in. Cook 5 to 6 minutes, until oysters curl.<BR>');
document.writeln('5. Add bacon, onion, garlic and celery back in. Turn heat off.<BR>');
document.writeln('6. Add milk. Stir.<BR>');
document.writeln('Optional:<BR>');
document.writeln('Add cornstarch to small amount of milk. Turn heat back on. Drop in another 1/4 ');
document.writeln('pound butter.<BR>');
document.writeln('Optional:<BR>');
document.writeln('Dice a potato very small, and cook on low heat until potato is soft.<BR>');

document.writeln('Season to taste. Recommended seasoning: salt, pepper, oregano, thyme, rosemary ');
document.writeln('in small amounts. Dash of: Worcestershire, cayenne pepper. Can add dash of ');
document.writeln('sherry wine.<BR>');

document.writeln('Da ol\' mon has been privileged to taste many of Joe\'s Oyster Stew dishes. But ');
document.writeln('without a doubt this was his best. A true tasty, mouth-watering masterpiece. ');
